The results of the conducted research showed that the content of especially dangerous and toxic nitrates in tomato does not exceed the permissible norms established by sanitary rules and norms for this vegetable, and the content of nitrites was not detected. Monitoring of toxicological contamination of tomato at the stage of technical ripeness showed that treatments with chemical means of pest and disease control applied in farms did not affect their quality. Along with contamination by chemical toxicants coming from outside, the main reason of tomato unsuitability for food is active development of microorganisms.
